If'n ya might have sweet tooth.... and it was a might cold last night...

Well Sir....these here recipe's were sent t'me by my 2 amiga's, Sue Gertson of Eagle Lake, Texas...and Miss Pam frum down Florida way......they look t'be real great tastin.....

OLD FASHIONED APPLE CAKE

4 c. apples, peeled, diced
2 c. sugar
2 c. flour
2 eggs
½ c. oil
2 tsp. baking soda
2 tsp. vanilla
2 tsp. cinnamon
1 tsp. salt
Cream Cheese Frosting
½ c. butter
1 (3 0z.) pkg. cream cheese
1 c. powdered sugar
1 tsp. vanilla

To prepare cake combine apples with flour; toss to coat.

Add remaining ingredients and stir to combine. Batter will be very stiff.

Bake in greased 9x13-pan at 350 degrees 45 to 60 minutes.Combine frosting ingredients and beat until smooth. Spread frosting over cooled cake.

Apple Almond Cranberry Pie

1/2 roll (about 3.5 oz) Almond Paste
1 unbaked 9-inch pie crust
5 baking apples (like Granny Smith), peeled, cored, and sliced (about 5 cups)
1 cup fresh cranberries
1/4 cup sugar
1 teaspoon cinnamon, divided in half
1/2 cup all purpose flour
1/2 cup uncooked oats
1/2 cup dark brown sugar
6 Tbsp. butter, cut into small pieces
1/4 cup chopped almonds (optional)

Preheat oven to 375-degrees F. Lightly butter a 9-inch pie plate and place pie dough into it.

Roll almond paste on a sheet of wax paper to form an 8 to 9 inch circle. Press rolled almond paste into the bottom of an unbaked pie crust.

In a bowl, combine apples, cranberries, sugar and 1/2 teaspoon of cinnamon. Pour into pie shell.

In another bowl, combine the remaining cinnamon, flour, oats, and brown sugar. Cut butter into flour mixture until crumbs are formed.

Spoon crumb mixture evenly over apples. Bake 50 to 60 minutes, sprinking with almonds (optional) during the last 5 minutes of cooking time.

CHEWY CHOCOLATE CHIP COOKIES

2 sticks of butter
2 1/4 cup of flour
1 tsp. of salt
1 tsp. of baking soda
1/4 cup of sugar
1 1/4 cup of brown sugar
1 egg
1 egg yolk
2 Tbsp. of milk
1 1/2 tsp. of vanilla
2 cups of chocolate chips

Melt the butter. Sift together flour, salt, and baking soda. Set aside.

Pour melted butter into large bowl. Add sugar and brown sugar. Cream the butter and sugars. Add egg, egg yolk, 2 Tbsp. of milk and vanilla. Mix well.

Slowly add flour mixture, mix well. Stir in the chocolate chips.

CHILL THE DOUGH for about 30 minutes. This is a very important step.

Once chilled, bake at 375 degrees for about 8 minutes. But check often! You don't want to burn these babies!!PS: I added some chopped pecans to the last half of my batch. They were delicious. I think walnuts would be awesome too! ENJOY!
