OK...on a lighter note... What's fer dinner...??

Well Sir...upon cruisin through some a the other blogs on this here fine day...it seems that some of them were a bit on the "heavy" side...so...gettin back to food & stuff...heres a good recipe fer y'all...


This is kinda simple...but good & tasty...and a nice change fer a Wednesday.....

Greek Chicken


6-8 large chicken breasts, (or one whole chicken—cut up)
3 teaspoons Oregano
2 teaspoons Kosher Salt
½ teaspoons Pepper
7-8 Garlic cloves…thinly sliced
2 Tablespoons Lemon Juice
3 Tablespoons Olive Oil
6-8 Cups cooked Rice..OR..1 package Rice a Roni
Chicken-Garlic Flavored rice.

First off…mix the Salt, Pepper and Oregano together, set aside. Coat a large bakin pan with some of the oil and place the Chicken pieces in the pan.

Now…usin the Oregano rub mix and garlic slices…coat the surface of chicken pieces…IMPORTANT…Peel back the breast skins and put the rub mix and a few slices of the garlic under it and replace skin. Put the remaining rub and garlic slices on top of the breast skins. Now sir…pour a little Lemon Juice over each piece.

Refrigerate the chicken fer about 2 hours. Get yur oven up to 350 degree’s….drizzle the remaining Olive Oil over the chicken and bake fer about 45-60 minutes, or until the pieces are a nice golden brown. Make sure to baste the pieces twice or thrice with the drippins. Serve over the cooked rice (I like the Rice a Roni)
