Susan's Recipe's.. Mexican Chicken Soup, Spicy Swiss Steak and some Great Pie.

Well Sir....a few months back I put out a plea fer some good recipe's...and although the response was somewhat measured....one nice woman down Eagle Lake, Texas way began sendin this here Cookie a fine bunch a recipe's that cover the gamet....from main entre's to deserts....her name is Sue Gertson....and I'd like t'say thank ya very much amiga....I truly do appreciates yur takin the time to write these up...and send me yur fine recipe's.

Bein the Camp Cook on many a huntin & fishin trip with the boys...I learned early on that in many cases...the best tastin recipe's were the fast and easy ones to prepare and re-heat.....

So.....below is a compilation of just a small fraction of what Ms. Gertson sent old Cookie....and I'd like to share them with y'all......

Susan’s Cream Cheese Brownie Pie

1 uncooked pie shell
1 8oz package softened cream cheese
3 tbs sugar
1 tsp vanilla
3 eggs
1 15.1 oz package fudge brownie mix
¼ c oil
2 tbs water
½ c chopped pecans

Heat oven to 350 – prepare crust as directed.

In medium bowl, combine cream cheese, sugar, vanilla and 1 egg until smooth. Set aside. Reserve fudge packet.

In large bowl, combine brownie mix, oil, 1tbs water and 2 eggs – mix well.

Spread ½ brownie mixture in bottom of pie crust. Carefully spread cream cheese mixture over brownie mix. Top with remaining brownie mix. Sprinkle with pecans.

Bale @ 350 for 40-50 min until center is done.

Mix fudge package with 1 tbs water, heat and spread over brownie pie.

Store pie in icebox.

Susan’s Mexican Chicken Soup

1 Chicken cooked and boned
Reserve broth

1 onion chopped
1 jalapeno seeded and chopped
4 tsp minced garlic
2 carrots diced
6 ribs celery diced
1 can Ro-tel tomatoes
2 cans Campbell’s Healthy Choice creamy chicken soup
1 tsp each of ground cumin, chili powder, salt and lemon pepper
1 cup noodles
Heat broth and add all veggies, noodles and spices – cook until almost done, then add soups and chicken (more water if needed). Heat until warm.
Serve with tortilla chips.

Susan’s Spicy Swiss Steak


2-3 lbs round steak
½ c oil
1/3 c flour
1 tbs chili powder
1 tsp garlic powder
1 tsp pepper
salt to taste

1 can Ro-tel tomatoes or 1 regular can tomatoes (for not so spicy)
1- 4oz can chopped green chilies
1 envelope Lipton onion soup mix
½ c water
1 large onion, halved and sliced

Cut meat into serving size portions and place in Ziploc baggie
Combine flour, chili powder, garlic, pepper and salt, pour into Ziploc baggie and toss until meat is coated.

Heat oil in large skillet on medium high heat and cook meat, browning on both sides.

Mix Ro-tel tomatoes, green chilies, onion soup mix and water in bottom of crock pot. Cook on low 12 hrs.

Serve with rice.

* May also cook in covered pan on stove for one hour on low
