"Greek Chicken".....

Well Sir...I was gonna post this here recipee yesterday, but if'n ya read my last post...y'all be a knowin what happened here at the Cook Shack and how it kinda ...interferred...with my day...besides...me and my dog kinda went a little squirrely we did....Anyways...here's a simple and easy recipee that will look and taste like ya either ordered it out frum one a them high priced caterin service's or you spent all day preparin it....here y'all are....Hey...WTR...this ones specially fer you darlin.......Greek Chicken....


6-8 large chicken breasts, (or one whole chicken—cut up)
3 teaspoons Oregano
2 teaspoons Kosher Salt
½ teaspoons Pepper
7-8 Garlic cloves…thinly sliced
2 Tablespoons Lemon Juice
3 Tablespoons Olive Oil
6-8 Cups cooked Rice..OR..1 package Rice a Roni
Chicken-Garlic Flavored rice.

First off…mix the Salt, Pepper and Oregano together, set aside. Coat a large bakin pan with some of the oil and place the Chicken pieces in the pan.

Now…usin the Oregano rub mix and garlic slices…coat the surface of chicken pieces…IMPORTANT…Peel back the breast skins a might and put the rub mix and a few slices of the garlic under it and replace skin. Put the remaining rub and garlic slices on top of the breast skins. Now sir…pour the Lemon Juice over each piece.

Refrigerate the chicken fer about 2 hours. Get yur oven up to 350 degree’s….drizzle the remaining Olive Oil over the chicken and bake fer about 45-60 minutes, or until the pieces are a nice golden brown. Make sure to baste the pieces twice or thrice with the drippins. Serve over the cooked rice (I like the Chicken-Gralic Rice a Roni).....ENJOY....Cookie.....
