An update on my best friends condition....

As my regular readers will recall that a few weeks ago I related that my life long best friend had been hospitalized with a very serious internal infection and condition, and I asked for prayers from all the good folks who would felt it appropriate to their beliefs....

Well folks, after five weeks immobilized in a hospital bed with many tubes in his body, Bob went home yesterday, even though at this point he can barely walk as he is quite weak and his muscles have atrophied to some degree. He's not out of the woods yet, but has vastly improved from his original condition.

Years back I read a scientific medical journal report regarding the power of intercessory prayer. It was a "double blind" study conducted under very strict scientific oversight. In short, the experiment showed that comparably ill patients, with similar or the same medical problems and conditions, who had been regularly prayed for by 100 people, improved faster and healed more completely than those patients who had not been prayed for. At this moment, I've forgotten who paid for this study, but I do recall that it was an organization with no religious or spiritual affiliations, nor any vested interest in what results the study indicated, one way or the other. A few years later, another group ran a similar study...with the same results.

I personally want to thank all who took the time to pray for my friend Bob, his family (and for me), as well as those well wishers who, although athiest or not religious, but took the time to write to me and give me encouragement. May God bless and watch over all of you......

Double Layer Pumpkin Pie by Sue Gertson....

Here be an award winnin recipe just in time fer the Holidays...thank's Susan....



"Oh so tasty. You may never bake a pumpkin pie again."

Graham cracker crust, store bought or homemade

3 oz. cream cheese, softened

1 cup + 1 Tbsp cold milk or half & half, separated

1 Tbsp sugar

1 1/2 cups whipped topping, thawed

2 pkgs. (4-serving size) vanilla instant pudding

15 oz. pumpkin puree

1 tsp. ground cinnamon

1/2 tsp. ground ginger

1/4 tsp. ground cloves

Mix cream cheese, 1 Tbsp. milk, and sugar with wire whisk until smooth.

Gently stir in whipped topping. Spread on bottom of crust.

Pour 1 cup milk into mixing bowl. Add pudding mix. Beat with wire whisk until well blended, 1-2 minutes.

Let stand 3 minutes. Stir in pumpkin and spices; mix well.

Spread over cream cheese layer. Refrigerate at least 2 hours. Garnish with additional whipped topping and nuts as desired.

I'm back....with a great Pork Recipe'... and a good joke..

Well Sir...the Cookie is back after a much needed break. Yesterday, my good buddy Charlie B frum out Chi-Town way sent me this great soundin recipe' fer Pork Medallions...one of my favorite meats....

Haven't made it yet but you cooks & chefs out there know that sometimes ya can just tell frum the recipe' that it's a great one...ENJOY....and thanks Charlie fer sendin this along....

Pork Medallions with Mushrooms and Rosemary

Pieces of pork tenderloin are flattened into medallions, lightly breaded and topped with a tasty mushroom-tomato sauce. Tubes of tomato paste, shelved near the other tomato products in stores, are convenient for recipes like this that call for a small amount. Just squeeze out what you need and store the tube in the refrigerator.

2/3 cup reduced-sodium chicken broth

1 tablespoon tomato paste

1/4 teaspoon dried rosemary, crushed

1/4 teaspoon kosher (coarse) salt

1/8 teaspoon freshly ground pepper

8 oz. pork tenderloin, cut crosswise into 4 pieces

1 tablespoon seasoned dry bread crumbs

1 tablespoon olive oil

1 1/2 cups sliced mushrooms


1. In medium bowl, gradually whisk broth into tomato paste. Stir in rosemary, salt and pepper. Flatten pork to 1-inch thickness; lightly coat pork with bread crumbs.

2. Heat oil in large nonstick skillet over medium-high heat until hot. Add pork; cook 6 minutes or until golden brown, turning once. Place on plate.

3. Reduce heat to medium. Add mushrooms to same skillet; cook 3 minutes or until lightly browned. Return pork to skillet; add broth mixture. Reduce heat to low; cover and simmer 2 to 4 minutes or until pork is pale pink in center. Place pork on plate.

4. Increase heat to high; boil sauce 2 to 3 minutes or until reduced and slightly thickened. Serve sauce over pork.

The Seven Dwarfs go to the Vatican, and because they are "the seven dwarfs" they get ushered in to see the Pope.

Dopey leads the pack."Dopey my son," says the Pope, "what can I do for you?"Dopey asks, "Excuse me, Your Excellency, but are there any dwarf nuns in Rome?"

The Pope wrinkles his brow at the odd question, thinks for a moment and answers, "No Dopey, there are no dwarf nuns in Rome."

In the background a few of the dwarfs begin giggling.Dopey turns around and gives them a glare, silencing them.Dopey turns back to face the Pope.

"Your Worship, are there any dwarf nuns in all of Europe?"The Pope, puzzled again, thinks for a moment and then answers, "No Dopey, there are no dwarf nuns in all of Europe."

This time all the other dwarfs burst into laughter.Once again, Dopey turns around and silences them all with an angry glare.

Dopey turns back to the Pope and says, "Mr. Pope, are there ANY dwarf nuns in the whole world?"The Pope answers, "I'm sorry, my son, there are no dwarf nuns anywherein the world."

The other dwarfs collapse into a heap, rolling, and laughing, poundingon the floor, tears rolling down their cheeks as they begin chanting:

"Dopey screwed a penguin!""Dopey screwed a penguin!"
