Somethin real funny...and somethin real great tastin....Chicken Kiev...


Well Sir...I was hardly done publishin m'post about needin recipee's when Stevin over at IONETIC sent me his grandmothers recipee fer Chicken Kiev...it's an "old country" recipee and these are the ones that y'all just cain't beat with a stick...I loves findin em and get'n em......and fer whatever reason they always taste better than most things t'day.....

Now Sir...I been kinda busy here this last week and I ain't been checkin out all the blogs as thoroughly as I usually do...and..a course I missed a thing or two. When I was over at Stevin's blog...IONETIC...I found one a his posts that had a whole passel a funny video clips...me and the misses had a few good old laugh at em. So...get yur butts on over thar and scroll down a might...y'all cain't miss it....

Agin...I thanks Stevin fer this recipee. Now..all a you good cooks out there be a knowin that ya can usually tell a great recipee even afore ya makes it...and this Chicken Kiev is one of em...and BTW....This great recipee is dedicated to m'dear frend Buster out there in Kansas......."Here's cookin at you kid...."

Chicken Kiev

* 4 boneless chicken breast halves

* 4 tablespoons butter, softened

* 1 tablespoon chopped fresh parsley

* 1 tablespoon chopped fresh chives

* 1/4 teaspoon white pepper, or black pepper

* 1/4 teaspoon salt

* 1/4 cup flour

* 1 egg, beaten with 2 teaspoons water

* 1/2 cup fine dry bread crumbs

Blend the softened butter with parsley, chives, pepper, and salt. Divide into 4 portions and chill until firm.

Flatten each chicken breast half to about 1/4-inch thickness by pounding each between wax paper or plastic wrap. Place a portion of the chilled butter mixture in the center of each flattened chicken breast half. Roll each to completely enclose the butter.

Dust each roll in flour then dip in beaten egg and water. Roll in bread crumbs then place in lightly greased baking dish. Cover and bake at 350° oven for 45 minutes.

Uncover and bake 15 minutes longer. Chicken Kiev serves 4.

Now...old Cookie has got quite a good sized repertoir of recipee's that he's been a buildin up o'er the years...several hundred at least....but it ain't endless....which brings me t'my point....I NEED YUR RECIPEE'S!

Now...almost everbody got a recipee fer sumthin! I knows a guy just down the street got a simple recipee mix fer everday BBQ'd hamburgers...but its great! By the way...its the only recipee he's got and the only thing he knows how t'cook....so as I said....everbody got a recipee fer sumthin. So...if'n y'all would care t'share yur recipee(s) with the folks...I certainly could be a usin it here on the blog.

Satisfaction at last......


Well Sir....I just cain't resist crowin a might bout havin finally satisfied a personal goal a mine the other night. I've been sendin in pithy and humorous comments to Bill O'Reilly fer well over two years...and t'other night he finally used one of my letters on his show.

Bill was here in Syracuse, NY last week speakin at the Boy Scouts of America Convention...in fact he did his broadcast frum here. Well Sir...a day or so later...our local left wing shit thrower of a newspaper...the Syracuse Post Standard published an op-ed just bashin him and Boy Scouts ( what I consider t'be a fine and outstandin organization). Riled the hell outta me it did.

So in Bill's Tuesday night broadcast...he referred to the scathing article and put the Post Standard where it belongs...on the "Do Not Buy...Do Not Read" list. I immejiately sent in a "pithy comment" (usin m'best spellin n grammer a course) givin him Kudo's regardin how he finally put the Post Standard where it belongs...in the trash can or the kitty litter box....and t'my surprize...he used that comment in his "your letters segment." Finally! Made m' evening it did.

Now...y'all gotta be understandin that I watch O'Reilly every night cause I really believes that he tells it like it is....no matter which way the wind is blowin at the time...and I respect him fer that. I truly do admire him fer being objective, intuitive and sincere. His interview skills are outstanding most of the time and it's not uncommon fer certain "pinheads" and liberal thinkin folks to decline his constant open invitations to come on his show and state their view of certain things. Now...I knows thar be some of y'all out there that absolutely hates Mr. Bill...but that cause the truth hurts...don't it? If'n ya don't like him...there be two things y'all can do...one is change the channel you idiot and the other is...stay away frum me...fair warning....but...I guess that's just my way a thinkin.....Cookie....

Rummy...an objective look see....


Well Sir...I been a read'n all the various blogs and comments about how everone just loves old "Rummy" (especially the way he handles all them press folks) and strongly dislikes all them Generals that have been a criticizin him fer his handlin of the war...well...lets play some devils advocate fer a spell. Let's assume fer just a moment mind ya...that there be some truth ta what they be a sayin bout him and go frum there......

First question....although I couldn't agree more strongly about the bad timin these here Generals picked to criticize his efficacy....this also begs the question...WHEN THEN? This war on terror is gonna be goin on a long time...and...if as they say...old Rumsfield is in fact makin some critical mistakes in his handlin of the war and we be a loosin men and women cause of it...then when should these men say something...one year...two years...or three years frum now. How many loved ones are gonna be lost when somethin coulda been done to lessen these losses. No...somethin's gotta be said now....which brings us to the method they're a usin to bring these alleged error's to the attention of the public........

One almost has to assume ( I hate assuming) that in some formal..in house manner...these Generals went through a "Chain of Command" to inform the President of their concerns...and were rebuffed and rejected. It could in fact be that each of these men have very real concerns regarding the safety of our men and women in Harms Way...and in a last ditch ( possibly futile) effort to make politicians and the public alike aware of the whatever problems may exist regarding "Rummy" they took the course they did...knowing the heat they would take and are taking.

I know these thoughts and observations are not popular amongst most of my friends and fellow bloggers read'n this discertation, but I refuse to "re-act" based on my likes or dislikes, or emotional feelings regarding this man and/or the Generals involved. The political statements, monitary motives and observations that many people are printing and promoting in regards to their (the Generals) motives are certainly pure speculation at best and definately premature at this moment in time....

Let us give both factions the benefit of the doubt for the time being and see if there is indeed somethin valid to what they're a sayin, what can it hurt to take a closer objective look see....might even save a few lives if there be some truth to the allegations.....but....I guess thats just my way a thinkin......Cookie...

More yardwurk.....Tilapia Italiano......


Well Sir...like many of y'all...there's plenty t'be done around the homestead this time of the year, and this here Cookie ain't immune to none of it....no sir...lots t'do. So here's a quick and good recipee fer all a ya that likes Tilapia (they be called Turper in South Africa)...it's a nice tastin fish that has become very popular over the last several years....Enjoy.......Oh...and BTW...do I get elevated to a differant Hillbilly Ecosystem status if O'Reilly use's one of your letters on his show....he did last night...

Tilapia Italiano

4-6 Tilapia fillets

1 Tbls. olive oil

¼ cup grated Parmesan cheese

2 Tbls. parsley flakes

2 Tbls. butter

1 Tbls. lemon juice

1 tsp. garlic powder

Mix Parmesan cheese, garlic powder, parsley flakes; set aside. Heat a large saute pan and add olive oil, butter, and lemon. Saute fillets 2-3 minutes per side until white and flaky. Sprinkle cheese mixture on fillets and saute each side for another minute, then serve. Makes 4 servings.

Sun's Out! Lot's a yard wurk t'do......


Well Sir....the Sun's out in full force t'day and there be a ton a yard wurk piled up frum the winter...so the wife got all the family t'gether and nicely asked us all if'n we'd do the chores that need bein done round here....so...y'all know what I'll be a doin t'day. If'n any of y'all wanna come over to the Cook Shack and give Cookie a hand...it shurly would be appreshiated.....just ask fer m'wife...Boss...er ...Mrs. Cookie...

New Passwurd fer my "puter"....911 fer m'wife and...Ham Salad and Split Pea Soup...


Well Sir...yesterday I thought I was a gonna have t'call 911 fer my wife...yupper.... she couldn't catch her breath fer a spell......

I was gonna change the Passwurd on my computer so's....fer some shock value...I decided to put in the wurd PENIS as the passwurd....well sir...I thought she was gonna just die laughin when the computer came back and said...."Password Rejected...Not Long Enough".....

OK...nuff bout me...now here's a couple a recipee's that y'all might enjoy.......most folks out thar are a gonna be havin some Ham left over after Easter Sunday...so here's a couple a suggestions fer y'all fer the Ham.....

Cookie's Ham Salad.....

Good size chunks of Ham

1 Full Jar of Bread & Butter(Sweet) Pickles...

Mayonnaise.....

If'n y'all got a hand Food Grinder...cut the ham inta chunks that you can put through the food grinder. Grind the ham pieces.

Cut the pickles inta pieces ya can also get inta the Food Grinder and grind all the pickles.

Combine the gound ham with the ground pickles and add Mayonnaise to yur consistancy and taste...add a little of the pickle juice as well to sweeten the salad if'n ya like......Makes great Ham Salad sandwiches.....

Cookie's Homemade Split Pea Soup.....

1 lb of dried Split Peas
1 Meaty Ham Bone
3 Quarts of water
3 tsp’s Kosher Salt
1 tsp Pepper
½ tsp marjoram leaves
2 cups of Chopped Onions
¾ cup of Chopped Carrots

Put the Split Peas inta the water and bring to a boil, lower heat and simmer about 3 minutes. Remove from heat and let stand fer about 1 hour or so….

Add the Ham Bone, salt, pepper, marjoram and chopped onions…cover and simmer for 1 ½ to 2 hours. Let cool….remove Ham Bone and pick off all the good pieces and chunks of ham y’all can find and return them to the soup. Discard the ham bone...or give it to yur hubby fer dinner... or give it to the dog…yur choice.

Add the carrots and simmer until they’re tender…about 20 to 30 minutes or so. Bring soup up to yur desired taste by adding salt, pepper or other spices y'all like.

To serve…y’all can also boil up some hotdogs or Polish Sausage, slice em and float em on the top of the full soup bowl. I also serve the soup over slices of toast…..Cookie....
